The semi-devoured state of this pastry perfectly captures the quick chain of events that follows your entrance through the glass doors of Du Pain et Des Idées. First, the luscious scent of butter and caramelized sugar hit you, and you wade in a daze through the sweet, heavy aroma towards the counter. Then, you are captivated by the sight of bakers hurriedly extracting golden baguettes and croissants and thrusting them onto cooling racks and trays.
You choose olive and onion breads, baguettes, walnut-filled pastries, and croissants, like a conductor masterfully pointing to musicians in his dazzling orchestra. And, if you are like me, you devour them all and save the best for last. Except that by that moment, you are so swept away in such a blissful sugar high that you take enormous and greedy bites out of the shining star of this 10th arrondissement bakery — the Chocolate Pistachio Escargot, before taking a picture to capture its entire glorious composition.
Sweet nuttiness cradled in buttery layers and smeared with semi-melted dark chocolate chips. This is the owner, Christophe Vasseur’s, crowning contribution to mankind. Try it now! Vite!
