Sweet History : According to reports, this crêpe received its name, Suzette, when Henri Charpentier — then an assistant waiter in 1895 at the Café de Paris in Monte Carlo — mistakenly set a sauce on fire, but the guest, the Prince of Wales, enjoyed it so much he named it after a young girl in his group, Suzette.
